Breakfast Muffins!

K made my recipe for healthy breakfast muffins tonight!  She even gave it her own twist.

She kept commenting that I never made my muffins anymore, “You know mom the healthy ones you always used to make me for breakfasts!!”  Today I said here’s the recipe why don’t you make them!  K has gotten very good at baking 🙂

Here’s my breakfast muffins recipe!  I always used whatever juice is in the house. I’ve used apple, fruit punch, and prune in the past. Tonight’s were made with pineapple juice and K added nutmeg to the recipe along with the cinnamon.

Healthy Apple Banana Muffins

Ingredients:

  • 2 cups whole wheat flour
  • 4 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/2 cup sugar
  • 1 1/2 cups apple juice or any juice you have in the house
  • 1 apple, diced
  • 2 ripe bananas, mashed

Preparation:

Preheat the oven to 325 degrees and lightly grease a muffin pan.

In a large bowl, combine the flour, baking powder, cinnamon and sugar. Add the apple juice, apple and mashed banana and mix well.

Pour the batter into the muffin pan, filling each cup about 2/3 full.

Bake for 35-45 minutes, or until muffins raise and are golden brown. Enjoy!
